Rosario Umbriaco Tavola calda e Bottega

Rosario was born in Enna in 1974 into a family of restaurateurs. That same year his father founded 'Tavola Calda Europa', where Rosario still carries on the family tradition today, making naturally leavened pizzas alongside the now-legendary arancini bearing the Umbriaco name and other classics of traditional Sicilian rotisserie.

Respect for tradition and painstaking care in selecting the finest quality ingredients, most of them entirely 'Made in Sicily', are the guiding principles of Rosario's work: Enna saffron, Piacentinu Ennese PDO cheese, Trapani sea salt, Ispica carrots and donkey mortadella from Chiaramonte Gulfi are just some of the ingredients used to create his iconic arancini, together with a blend of flours from ancient Sicilian grains that gives the coating its crispness. In 2018 Rosario was awarded the title of 'Ambassador of Taste'.
